This is a no-nonsense compilation of recipes I often make. It’s mostly for my own reference. You (and I) can easily find these online, but extracting essential information for a cooking recipe from a website is virtually impossible. Outside of the first time I encounter a recipe, I do not care about the dish’s origin, its history, every conceivable place to eat it, the various products being sold by the website’s authors, etc. Also, the number of autoplay videos on sites with cooking recipes – even with ad blockers – is shocking. Cook books are great, but storing recipes in an R list is more efficient than using physical books and having to constantly add to them. I started adding to this list in 2023 so it’s fairly incomplete but I’ll add more over time.

Recipes

Socca Bread
  • Ingredients
    • 1 cup chickpea flower
    • 1 cup water
    • 1 tablespoon olive oil
    • 0.5 teapsoons salt
    • Some fresh rosemary (optional)
    • Some za’atar (optional)
  • Instructions
    • Heat a 10” cast iron skillet to 475. Mix ingredients. Spray some oil in the pan. Bake for 17-30 minutes. Don’t undercook. Eat it. Dip in olive oil and vinegar. Enjoy with wine.
Pancakes
  • Ingredients
    • 1.5 cups flour
    • 3.5 teaspoons baking powder
    • 1 tablespoon sugar
    • 0.25 teapsoon salt
    • 1.25 cups milk
    • 3 tablespoons butter (melted)
    • 1 egg
  • Instructions
    • Mix everything. Now you have pancake batter. Heat pan. Put oil in it. Put pancake batter in pan. Eat.
Pizza dough
  • Ingredients
    • 3.5 cups flour
    • 1.33 cups warm water (NOT hot)
    • 2.25 teaspoons (7g) yeast
    • 2 tablespoons olive oil
    • 1 tablespoon sugar
    • 1 teapsoon salt
  • Instructions
    • Mix water, yeast, and sugar in a big bowl.
    • Let that sit for 5 minutes.
    • Mix in everything else. Cover and let the dough rise for 90 minutes or so.
    • Split dough in half, put one of the halves in a bag in the freezer.
    • Flatten dough, BRUSH WITH OLIVE OIL
    • Put some corn meal on the bottom of crust
    • Cover with toppings
Quiche
  • Ingredients
    • 6 eggs
    • 3/4 cup heavy cream
    • 1 1/2 cups cheese
    • 1 refrigerated pie crust
    • A little salt
    • A little pepper
    • Some other add-ins (bacon, sausage, ham, green onions, spinach, etc.)
  • Instructions
    • Preheat oven to 425
    • Mix everything (except the pie crust) in a large bowl
    • Press pie crush into 10 inch cast iron skillet
    • Pour ingredients into cast iron
    • Bake for 30 minutes or so
